Which one would y’all fry? Does one really taste better than the other when fried? Wasn’t sure if I’d get better response here than the food and drink board.

In order of quality it’s red, vermilion then mangrove. I’d cook the red snapper in other ways since it tends to be thicker and flakier with Bette flavor. Grill, broil, bake and season lots of different ways. Mangrove I would cut up and fry. Vermillion I catch so infrequently I don’t have a prescripted method. But it’s very good so you can do lots with it. Sushi is one thing I wouldn’t do...meat is to chewy..flavor not bad but texture is no good

Why do you want to fry it? Skillet, some butter and pan sauté

Mangrove cheeks and throats all day every day. Best fried fish you'll eat.
