Wrap the breast strips in a thin, but solid bacon, grill until bacon is done.

Take the breast strips and roll in a flour and cornmeal mix, dip in egg, dip back in the cornmeal/flour again and let sit for about 10 minutes. Fry them up.

Slice breast meat thin and add to a stir fry with mushrooms, peppers, onions, sliced brocolli. Splash a little soy sauce in it as it is cooking. Serve over rice. BTW- add the meat near the end, once the veggies are almost tender.

My ex's grandmother made duck dressing that was very good, but I don't have the recipe. I used to get her to make some every year.

Marinate the breast strips in sesame oil with ground ginger added. Grill as is.

Add to a gumbo or stew. Remember, duck doesn't need much cooking to become rubber.

The fried duck fingers are pretty damn good. I grill them and finish with a honey ancho glaze, you can do them as a kabob also.

Throw the mallards but take the teal/gadwall and brown the shyt out of them- preferably in a black pot over a fire. Then make a brown gravy. Cook them until you can pull the leg bone out of the meat with a small tug.

Season and brown the teal a little bit and then put them in a crock pot with some vegetables, a can of golden mushroom soup, and a can of french onion soup.

Best way to cook em. When u think they are browned enough, brown about fifteen minutes longer. Ces't bon. Stuff the body cavity with fresh green sausage too.

Keep it simple... Can of Mushroom soup, garlic and a Packet of onion soup mix... slow cook in crock pot with your favorite veggies... Try this recipe with just about any migratory bird too... I've never cooked another quail breast in the oven since trying this on out
