If its a decent size bass you can put them on the BBQ pit like a redfish. Delicious.

one summer in belle river we caught a 48 quart cooler full of bream. we started to filet them because it was so many. we ended up grinding the meat into fish patties and grilled half and fired the other half. both ways were damn good.

bake or braze dat quick on sum foil in da oven shay, wit lil lemon juice and garlic butter on em, wit au gratin taters and salad on da side, its simple and so damn good baw...

I just made a bream sandwich with 8 sauteed bream fillets, mayo, and some mustard greens. Was pretty good

I made up some fish cakes based on this post last night. I subbed sour cream for the mayo and added some green onions also used Italian bread crumbs vs making own with food processor. Must say they were damn good. Mostly fish and not all breading like some recipes. Kids scarfed them down. May even keep a couple big nasty drum and give this a try.

Glad it worked out. I forgot to say in my first post I always opt for some Yum Yum sauce over remoulade sauce.

Have you ever had wowee sauce? They sell it around Lafayette. It's similar to Cane's sauce, I bet it'd be great on them as well. I was thinking of doing a cucumber/dill sauce over them but that's getting too fancy for me.

Damn totally forgot a dipping sauce. We just ate them as is with a side of baked mac n cheese.

I do that with sheephead and redfish but bass or bream would work.

You can also use it in the place of canned tuna for tuna salad.


Get a pot of water up to a boil and add a tsp of crab boil to the water and 1 TBS of salt. Add 1lb of fillets to the boiling water and cook them. When they done strain them in some cheesecloth and reserve the meat. Use the meat in place of canned tuna for tuna fish.
