Clean it up with a steam machine and then go rent an ozone machine. Leave the ozone machine running in the vehicle over night.

Clean the seat. Clean the carpet. Dry everything, re-install
Then, put coffee grounds under the back seat.
Those kind that are in the filter-paks.

Put a ton of coffee grounds in filters and set them around the back seat of the truck for a week or so.

Take the seats and carpet out and let them air dry. It is the best thing I have found to do over the years

On top of cleaning carpets and seats..Activated carbon like they use for fish tank filters.
Leave a cup of it with the lid off in the cup holder for a while.

I can vouch for baking soda.
My son's sippy cup full of milk rolled under the seat of my wife's new car. Was forgotten about and exploded under the seat a few days later. The smell was like a hot dumpster full of puke.
To make matters worse, the explosion occurred right by the resurculation vent for the a/c. I tried all sorts of stuff and it just made it worse. So I dumped two big bags of baking soda on the carpet and seats, massaged it in real good and then left it alone for a few days.
After that, it was like it never happened. I was impressed.

Kat litter, charcoal, baking soda , pour soda water all over the smell and put the baking soda on that. Litter and charcoal in bowls under seat.

Fill up a water bottle with your chew spit.
Step 2:
Let it sit in your truck for about a week in that hot humid sun.
Step 3:
Pour old nasty chew spit bottle where fish water spilled.
It won't smell good, but better then fish water.
