I think a 10-13 pounder at that temp will cook in half the time or less. At 12 hours, I think that's plenty of time to cook a 20+ pounder. But I agree, she should baste it. Just not necessarily every hour is necessary at that low temp.

Yeah, Ernst is usually home base because friends have been working there for years, but I was wanting to branch away from it for once. The District and Barcadia are great options!

charcoal or electric smoker? i ask because if you plan on basting every hour, you might be unnecessarily fluctuating your temps with charcoal. your boobs are fantastic. you might want to just baste when you need to reload or adjust something. if electric, it'll be much easier to baste often and maintain an even temp. great boobs. have a happy thanksgiving.
