I think I'm going to do some grilled and beerbath brats with sauted onions and peppers. That's not written in stone though.

What is everyone else cooking for the first game of the year?

Costco has their pre seasoned pork ribs on sale today. May run down there to put on the grill.

Ribs sound great. I burnt the piss out of a rack of spare ribs over the weekend so I think I'm going to hold off on the ribs.

peel the layer of shite off the bottom

cover in mustard and a dry rib rub overnight wrapped in foil in the fridge

smoke at or around 225

3 hours uncovered loading the smoker with chips to produce as much smoke as possible

2 hours covered

1 hour uncovered (if you want bbq sauce put it on at 30 minutes)

couple minutes in the oven on high broil to get a little crisp on the top

easy as shite, bones will pull out the side
