Ezra and Zeb have been separated for years with Ezra literally in a different galaxy thanks to the space whales. I imagine this Mando adventure is happening roughly contemporaneously with the events near the end of Season 1 of Ahsoka. So, Thrawn, Ezra, Sabine, and Ahsoka are all indisposed and unable to be interacted with by Mando or Zeb.

Ahsoka started immediately after her appearance in Mandalorian season 2. Baylen and Shin rescue Morgan from Republic custody after Ahsoka handed her over from their fight in Mando. I don’t think much time passed during the events of Ahsoka. Considering Grogu went to train with Luke and the events of the Mando third season, Ezra should be back for a while now. Plenty of reasons why he would be busy. Just would’ve been cool to see him.
