Unless they let Asha off behind the scenes, technically the Seven Kingdoms at the start of the show were 9 kingdoms
The North
The Riverlands
The Iron Islands
The Vale
The Westerlands
The Crownlands
The Stormlands
The Reach
Dorne
Excluding the Crownlands, it’s still 7 kingdoms.

I'd hate to be an Iron Islander
I will grant you... if the series had ended with Tyrion wheeling Bran out of the meeting and checking to make sure no one was looking before he dumped him on the floor it would have been fine.
Bonus points if Tyrion then says "I always did want to cornhole me a cripple." as the very last words of GoT.

"I love Westeros....."
rolls Bran to the edge of spiral staircase
"...the things I do for love"
pushes bran over edge ... wheelchair bounces down 20 floors like a Naked Gun movie

It's seven if you exclude the north and crownlands. There are actually 8 kingdoms plus the crownlands if you include the north. 9 kingdoms if you count the crownlands as a kingdom.
Before the Targs, Riverlands and Iron Islands were part of the same kingdom and the crownlands were part of the Reach/Riverlands/Stormlands. That's how you get 7 even though it is more than 7 now, they just kept the name.

Correct House Hoare conquered the kingdom of rivers and united them under the rule of the Iron Islands before the Targaryen Conquest.
Harren Hoare created Harrenhal as his seat to rule the united kingdom of isles and rivers and got roasted by Aegon.

Wrong. The Iron Islands were ruled by the Riverlands, and the Crownlands were ruled by the Stormlands.
