She had to be willfully overlooking how things really were for years and years. Was she just too much in love with Michael to wise up and get out while she could? Was she just enjoying the lifestyle he provided but couldn't help being judgmental about his "family" business? She always kind of irked me in the movies.
Of course, in the looks department she pales in comparison to Apollonia. But she couldn't help that I guess.

I know he lied to her at the end of I, but really go back and look at I. From the beginning he was pretty fricking clear about who his family was and what he was when he took control.
So go to II, she was just mad for being left alone at Lake Tahoe. A little more family time and freedom and she would have been happy, it had nothing to do with the family business.
Then by III she was just balls to the wall, but that's because Michael was resigned to writing her a check and letting her be an a-hole towards him.

Apollonia was definitely smoking (no pun intended).
Pisses me off that Fabrizio was involved in the attempt on Micheal that killed her. Don Tomissino must not have been running too tight of an operation to assign him as one of Michael's main bodyguards.

A scene was shot for GF II in which Fabrizio's car explodes (poetic justice). But that too was cut from the final print. However it can be seen in the chronological Godfather Saga.

Debatable
Appolonia versus Kay isn't even debatable.
And to add, if she had lived she would have been the perfect complement to Michael. She would have been the Sicilian wife that knows her place, but has her husbands ear. This couldn't happen as the story is about Michael and his journey from idealist to monster. His "relationship" with Kay furthers the cause.
