I've had both and Uverse is better, IMO. Maybe Dish has changed since I had it last, but here were my pros/cons.
Uverse Pros:
Not as much equipment. No dish install.
Can record multiple shows at once.
Better layout.
Fast internet.
OnDemand has a ton of great stuff in it.
Uverse Cons:
Part of AT&T and customer service can be a beating.
Service strength is dependent on how close you are to the source of the signal. If you are far away, you may not be able to record as much as if you were very close to it.
Dish Pros:
Lots of channels.
Not part of AT&T.
Cons:
You own the dish now, so if you move or switch, the dish is your responsibility.
In very bad weather, you will lose your connection or it will be spotty at best.
Hope that helped. I'm sure there's much more to add to those.
