You really need to break this down into sub categories. They're are an insane amount of great docs out there

Some that come to mind:
Icarus
Free solo
Perfect bid
King of kong

These are my favorites out of the ones I have seen the past couple years.

Athlete A is another good one. Also recommend pairing The Dawn Wall with Free Solo for a climbing double header.

Immensely fun and entertaining watch about renegades who squatted and climbed Yosemite Valley back in 70s.

Its more centered on the culture and personalities rather than technical climbing feats but its really a great history lesson on climbing in America and the subculture.

Grizzly man is a heart warming doc about a guy who loves bears.

The wild and wonderful whites is always a hoot.

The queen of Versailles is awesomeness.

Too many list.

The Social Dilemma is most recent that comes to mind.

We Are Champions is a mini series documentary that I really enjoyed too.
