Illegal payments in sports

OK, with all the Will Wade scandal more and more people are talking about how "all the big programs" pay players in both football and basketball. I don't it's as widespread as some people say, but I know it goes on.
So this is my question, why don't pro teams do the same thing in order to cheap salary cap/luxury tax issues? For example, why doesn't Drew Brees just agree to a team friendly $10 million dollars a year for the next two years and then get paid the rest of his market value under the table? I'm sure there is something there to protect against it, but there is always way to funnel money to people.
What am I missing?

Everyone involved would be arrested for tax fraud if it was truly under the table.
If the payments were actually accurate but just not reported to the league, then the other owners would band together and demand the owner of the rogue franchise be forced to sell the team.

The Warriors were unbelievably lucky to have signed Steph Curry to a 4 year extension at a time when he was at his lowest value. This led them to being able to sign Durant. Klay and Draymond were incredible value picks but their contracts are as straightforward as you can get.
It’s an incredible 3 year stretch but this will be the last year of it.

For a multitude of different reasons, but the Players Association is one of them

I mean yeah, it's illegal, but so is a lot of the shite going down with NCAA sports. Obviously the team wouldn't write a check for it, but it would come indirectly through donors or whatever. I'm not saying the Saints or anyone else should do it, but I've just always been surprised no one does it. I do think there have been a couple of scattered incidents according to the google

Like everyone wants to shite on Saban for paying players but I don't think he does.
It's easy to spot the obvious programs that pay players. Which is why I have been calling out LSU and Will Wade for a year now.

That's called salary cap circumvention. It's explicitly forbidden.

It’s common in college basketball and it goes through these aau coaches and shoe rep guys. It’s common knowledge.
College football has avoided this mostly because aau and show brands aren’t as involved with football. Still happens but it’s not the standard.

The T-Wolves tried to do this in a way back in the late 90's and got caught and hammered for it. They signed Joe Smith to a series of below-market deals with the under the table understanding that they'd make it up when they got his Bird Rights. NBA took away their first round pick in 5 straight drafts.
