What’s Included In A Material Takeoff List?

Trying to get a quote for a new construction build and have requested a materials takeoff list from a few suppliers. What will be included in this? Are things like doors, windows, and sheetrock included? What about outlets and insulation? I’ve started a list of small things myself (door knobs, receptacle boxes) but didn’t want to waste time on things that will be included.
If doors and windows are included how do they decide which ones to price? This is my first experience with a takeoff so just trying to see how it works.

Yes, they will include materials broken down by phase (usually). They’re not going to spend a ton of time doing it, and many use software to spit it out for them. You can also pay a 3rd party to give you and independent takeoff and have them quote for it.
One thing to note, always review the quotes and quantities. Adjust the quantities to match and look at the quotes that way. Many will adjust the pricing of material, but quote a different quantity. You want to look at apples to apples.
You’ll have the lumber, nails, stakes, wire, rebar, etc. used in forming and pouring. Obviously this won’t include concrete.
You’ll then have a framing package which will include all lumber, nails, lam beams, trusses, etc. called for in the plans.
You’ll have a windows and door package. Typically this will be standard builder grade material, OR what is specified on the plans. This can always be adjusted to your preferences.
Same for the rest of the materials, trim, roofing, etc.
No fixtures, electrical fixtures/outlets, plumbing materials/fixtures, hardware for cabinets/doors will be included. Cabinets, countertops, etc. will be sourced from other suppliers so they won’t quote these items either.

Take offs are done for material. Framing, decking, siding, sheetrock, brick, stucco, insulation, sod etc. etc. It's a tally of how much material will be needed for said building phase based on your plans. Those will come from the foundation people, framers, electricians, plumbers, siding/cornice and interior finish guys, etc. Your subs. They generate the material take offs based on you plan.
Selections are up to you. Windows, doors, plumbing hardware, cabinet hardware, electrical fixtures, counter tops, paint schemes etc.

Let your subs do your takeoffs. They will know better than joe blow at the hardware store.

This is your best course of action. One thing you need to be on top of is your exterior door and window orders. Especially windows. It's a good idea to order your windows when you pull your permit. Don't even wait to pour the slab. They have around a 20 week lead time and can shut down your entire build.
Also a good idea to order your appliances early on.
