What fertilizer should we be using right now for St Augustine
I haven't fertilized since June and was thinking about fertilizing now and again in Nov.
Any suggestions on what to use and if my plan sucks or not?

Your LSU extension is the perfect place to start:

LSU on St Augustine

EDIT: Looks like your last application of fertilizer should be around beginning of August. Probably avoid any more fertilizing for this year.

Don't you want it to grow faster so you can cut it more often?

Yes, if talking specifically about growing. there are growth limiter/suppressants that will make the grass grow much slower.

Golf courses will use them to prevent certain grasses from going to seed.

My suggestion, read this brief article, from Sept 2018, from one of the BR area’s long-time LSU AgCenter’s parish (county) extension agents (Kenny Sharpe) and consider following his recommendation. Winterizing Your Lawn
TLDR: This month consider fertilizing with a high potassium/low or no nitrogen fertilizer to prepare your St Aug for winter.

For St Aug this time of year I would use 5-0-20. In October I would put down simazine. Then don't do anything but spot treat any weeds for the remainder of the year.

Rain seems like the best fertilizer to me. Whenever it rains, the first thing that comes to mine is that I'm gonna have to cut the grass

Yes, and for this reason pre-emergents for problematic winter weeds should be applied, in south LA, from mid-Sept-early/mid Oct. From what I understand some winter weed seeds, not all, begin to germinate at soil temperatures as low as the mid to low 70s. Since most pre-emergent herbicide are active for 3-4 months before they require re-application why take the chance with later application of pre-emergent. Once a weed seed germinates, then one is dealing with post-emergent herbicide control.

What herbicide do you recommend for pre-emergent and spot treating post emergent? I'm dealing with dollar weed and virginia buttonweed. sucks.

Pre-emergents, Dimension (dithiopyr) or Barricade (prodiamine).

Post emergent control of dollarweed and VBW: MSM Turf, Celsius or Weed-Free-Zone. Temperature restriction on the Weed-Free-Zone (wait until PM temps are in the mid-80s otherwise it can damage your lawn grass). Repeat spraying in 3 to 4 weeks. Use a surfactant (spreader/sticker) with all three of these post-emergent herbicides. Surfactant is particularly important for waxy leaf plants like dollarweed.

Yep - VBW is the scourge of all of us. it’s the #1 problem lawn weed in the south, well at least in LA according to the LSU AgCenter.
