What club do you swing for chip shots?
Im talking about shots around the green, anywhere from 10-30 yards out. I have a 45, 50, 56. My problem is getting that nice little soft loft and wondering if I should get a 60 or some type of lob wedge.

Open your stance a bit. Aim clubhead of your 56 at the target. You will turn it into a 60.

You should be able to get enough loft on a 56* in most situations. In those rare situations you need to play the hero shot, opening the club face and stance on the 56* should be fine.

My hunch is you aren't playing the "correct" approach to the shot. Meaning you're trying to land the ball 6' from the hole and let it one stop vs. 20' from the hole and utilize the slope to roll out.

I use my 50* and 54* most of the time without issue....depending on the lie, distance, and slope of the green.

If I'm around the fringe, I'll chip with the 8 iron.
If I'm further out, I'll use my 56.
If I have to carry a hazard or get it to stop immediately, I'll do what ballchamp recommended.

For the impossible shots, I'll open the club face up and try to hit that crazy, full swing flop shot.
I managed to pull it off and land it 2 feet from the whole once. I felt like a pro.

Aim left, swing right.

20 yards and it, I use a 60, unless it requires a bump and run, then an 8 iron on the toe.

I use a 57 with softer flex than the rest of my set. Gets the ball up and landing softly.

All weight is on lead foot as well.

Chip: PW, Gap, Sand
Pitch: Sand, Lob

But you can open up any club face and aim further left to get more carry vs roll.

I use my utility wedge which is a 50degree club. I just do better with in versus my 56. It has better bounce and weight. Feel more confident hitting it.

I've tried going exclusively with my 56, but it is just not nearly as consistent.

If you want it to go up. Play it back to keep it low to the ground.

I am in need of a new 58*. Some time ago, i stopped making full swings with 58*. Instead, I take partials withe 54 or even 50 when I am at 58* full swing distance. So, should I do this as well?

Unless I'm sitting in some nice fluffy grass with a good lie, around the green im going PW. I have so much more control of distance and aim compared to a lob wedge and waaaaaay less duffs.
