Well I have uncharted 2 and 3, infamous 2, last of us, demon souls, and all of the god of wars so I have a lot left. Oh yea and GTA v will be out this year

With that in mind, you can skip on UC3 unless you find it for a good price. It's pretty much a poor man's UC2. (imo)

Although I would say that naughty Dog has perfected applying simple gaming mechanics to this generations best looking adventures and set pieces.

While I agree that the story and cinematic aspect of the Uncharted games takes precedence over the gameplay, I wouldn't say the gameplay is really all that more "simple" than any other big budget title this generation.

So, what studio(s) is doing it better in your opinion and how?

When I say "simple" I'm referring to the fact that the Uncharted Series, while really great, its gameplay is no more complicated than any other third person action adventure. It's not a bad thing, it's just that the gameplay of Uncharted is really nothing you haven't ever played before.

Okay. I agree with you there. The gameplay is basically a 3rd person cover based shooter not much different than Gears of War and it's ilk.

Depends. She loves it as a hobby because it makes me happy and she says people have worse hobbies. However she doesn't like missing out on the attention.
