Idk it was popular. You ever had gumbo with fish in it? After reading this thread, I might get a bowl from waterfront to night.

Yes...but not nearly as much as they are doing. It's fine to have alittle fish, or fish stock in a seafood gumbo, but I'd say they are going too far. Must be for the redneck palate...something I know very little about...

No. I've had courbouillon and fish sauce piquant and in stews and even soup. But NEVER in a gumbo. Learn something new everyday.

Never had one with crawfish in it either for that matter. I keep my seafood gumbos to just shrimp, oysters, crab.

This. I'm not a fan of mixing crawfish w/ crab &/or shrimp in any dish.

Crawfish in Gumbo is a waste IMO

I have had fish in a seafood gumbo and it was good.

If you ever find yourself at waterfront grill in Monroe, get a cup of gumbo. Pork & shrimp and it's delicious.

I've made a pork gumbo. And brisket gumbo. And red bean gumbo. All were good. The brisket gumbo was really really good.

Fish in gumbo is not bad. Alot of people use this instead of lump crab meat...it's cheaper. It cooks down and bust all up and it adds texture and flavor. It's not overpowering like you think it would be. I'm sure if you use basa catfish or any kind of "Farm" raised fish....I'm sure it would have a stronger taste.

Never had fish in gumbo but I'd imagine this is a nod to Alabama's farm raised catfish industry. It would be like having lobster meat in the gumbo if this was being done in the state of Maine. It's both states working together to add an ingredient more unique from each state. Alabama has crawfish, shrimp, oysters, alligators, etc just like Louisiana and vice versa with Louisiana and catfish but I think the point is to add something a little more unique to the area.

Personally, I'd rather them simply cook the catfish separately. Fried catfish strips with seafood gumbo sounds delicious.

Honestly, I don't think it will matter much. Anything cooked at one time, in that large quantity, can't be all that great. Cant be much attention to detail.

This is just a publicity deal and a world record. Taste will be an afterthought. Since catfish in Alabama is pretty cheap, it's not a bad way to go to get more volume.

Although I'm not sure about catfish in my gumbo, I'd try it with an open mind. And I don't get the hate for catfish on this board. Fried catfish is the tits. Blackened is pretty damned good too.

The only time I've had fish in gumbo is at Piccadilly when I was kid. That stuff was pretty bad. I can't believe I ate it. I would only eat the juice with the rice, though. Had that okra in it. Lawd knows what kind of fish that was or from where it came.

Exactly. I have a bit of soft spot in my heart for catfish as the father of one of my best friends growing up was one of the biggest catfish farmers in Alabama. They were big Auburn fans but good folks.

Blackened catfish is highly underrated. If it's seasoned right it's very good. Fried catfish is very good if lightly breaded. Rarely has a fishy taste at all if cooked right.

I'd be down for that. In florida, conch, shrimp, and crab gumbo...damn that sounds good.

I've put a couple redfish filets in a few from time to time. Cut into pieces. It's a hearty fish that stays together unlike catfish.

Gumbo can be a clean the freezer meal. I've had many different ones. Fried chicken gumbo is a favorite.

I'm pretty open as well but if I ever see a gumbo with cheese, I'm outta dare.

I think Zach's wife, Lucy, feels the same way.
