gonna throw the ribeye on the grill thats been sitting in fish sauce for 4 days. its supposed to mimic aging the steak.

Have been airing out the house all day from the seared scallops last night. That smell was overpowering after leaving the house and coming back.
For dinner is this...
After about 4 hours
About 45 minutes to go. Rub was Brown sugar, dry mustard, smoked paprika, chili powder, garlic, celery salt, cayenne, black pepper, cumin.
Mop sauce is some of the rub dissolved in equal parts rice wine vinegar and Parish Envie. Added some extra brown sugar and red pepper flakes.
