Got detoured from the jalapeno and bacon mac and cheese from earlier this week. Having it tonight. Turned out pretty good. I thought I had too many roasted jalapenos when I first tasted the sauce, but I would add more the next time after tasting with with the cheese and pasta. The roasted peppers add a really great flavor.
Pretty much made a white sauce with pinot grigio in it, added parm, the peppers and some aged white cheddar. After the pasta, I tossed in some fried thick bacon which holds us well in the sauce. I used Wright's.
I'm wondering how it freezes. I used cream instead of milk because I was in the mood for richness. Will probably use whole milk next time. Considered some minced shallots in it, but I added some chopped yellow onion instead. I'll try the shallots next time.
Y'all better watch that IMing. The new hall monitors are going to getcha!
