I never seem to have enough! A day or two of leftovers/sandwiches and a gallon of turkey/sausage gumbo and the fridge is cleaned out.

Well I grew up on leftovers so very little is wasted at my house. If I can't get to making a stock I just freeze it for later. And we have started cooking smaller dishes.

i've used every bit of the turkey we cooked. since smoking the turkey on thursday, i've eaten it sliced off the bird, with rice/gravy, chopped up in a stir fry, sandwiches, and I'm making a hash with the last of it tonight.

no reason to waste any of it.

We never waste any. Hell, I smoked a second bird just to insure I'd have leftovers for hash.

Thats a shame. My mom and i alwayskeep the turkey bones and all ansd make a stew
