As suggested, you can buy 4-5 nice flank steaks at a reasonable price. Marinate overnight, and throw on the grill. You really can't go wrong. Also, a nice corn dip is good on a hot day.

Would buy enough ground beef to provide taco meat and use that with refried beans, shredded lettuce, diced tomatoes and sour cream to make nachos, tacos and soft tacos. I would cook stewed chicken with green chiles, onions and peppers and offer that with flour tortillas. I would offer sides of lettuce, chopped tomatoes, black olives, sour cream, green chilisand refried besns. lots of sslsa too. I would offer corn taco shells, flour tortillas, and corn chips, maybe some lime wedges too. Spray chips very light with oil and dust with chili powder and heat enough to warm them and set the chili powder.
