You could make Carne Guisada. It's a Mexican beef stew. Goes great over Spanish rice with tortillas and guacamole on the side.

Whatever. Thanks. Anyway, I understand, but if any Spaniard with limited dominion of American English heard Spanish rice, they´d laugh and think you´re referring to Paella.

Seriously, fajitas, can´t go wrong.

Do some Mexican dips and then chicken and steaks fajitas.

I marinate my meat in this stuff and then sauté onions and peppers in it. It's really good. Check out Rick Bayless's website for places that sell it.

Fajitas is the answer. Marinate your flank steak or chicken tenders in Adobo and lime juice. Make some guac and salsa. You should be well below your budget.

I always go to the Mexican market and get marinated flank steak and chicken and grill it outside and then cut up with homemade tortillas.


Quick, simple, cheap and everyone loves it

Make some guacamole, queso, and have some rice and black beans.

Put some pico, cilantro, and onion on top of fajitas. Awesome.

Head over on Florida, just west of Airline to that big Mexican grocery store. Must be 30k sf, and they have everything cheap including premarinated meat...

Mickey Brown Hot Tamales
Cover that with some home made chili
Sliced jalapenos
Cover that with cheese and bake it at 375 for 25 minutes.

Use it as a dip with tortillas

Used to make a dip like that. Sounds not too good, but it was. Big can of tamales with the sauce, cut them up in a bowl. Add a can of corn and some cheese. Microwave til the cheese melts.
