San Francisco, Baltimore, New Orleans.

Crab and other seafoods are the logical ties if you were going to do a fusion type thing.

Crab Cakes?

Or, would you go for representative foods from each city? Tired of the normal wings and finger foods. Looking for something small that would represent all 3 cities well.

Do something that uses Napa wine do deglaze.

Too many flavors aren't always a good thing.

Also apparently San Fransisco is known for bread bowls? Never heard of that, but I read it.

You could do a crabmeat pizza with yellow bell pepper, purple onion, and fresh spinach (Mardi Gras colors) with a pesto sauce.

Crabcakes is pretty good. Baltimore is knowns for their crabs, as is New Orleans.

San Fran is a bay city so i am sure they have crab cakes too.

They love clam chowder served in sourdough bread bowls. Cart vendors everywhere - especially in the tourist sections. Better than hot dogs. San Fran is as cold and rainy as Seattle so they hit the spot.

I had pretty damn good food in Baltimore. Those hot brown (edit: pit beef) sandwiches are fricking good and great Italian food.

That's a good idea.

As to the Crab Cakes, yeah, San Fran has crab cakes everywhere. It is a big thing there too.

Crab Cakes, Cioppino with Louisiana seafood, and then sourdough po-boys with pit beef, horseradish, and onions.

Might just work . . .

How about picking one major food, like seafood for example, and then making it three different ways? Make a shrimp jambalaya for New Orleans, crab cakes for Baltimore, and Cioppino for San Fran.

That's a good idea too.

Or, maybe just 3 kinds of crab cakes with each representing a different city?

That will work as well. It just depends on whether you want different types of food or not. The SF dish is a soup which could work as an appetizer. The crab cakes could come next, and the jambalaya as the main entree

I'm not sure on availability in January(even as warm as it has been), but my suggestion is a soft shelled crab Banh Mi!

Maybe do crab cakes with some Asian flare to them to represent the Chinese influence in the SF cuisine?
