I cooked a pot of jambalaya tonight at work. Sitting on the counter was a dozen of donuts left over from the day crew, so I decided to make poor man's bread pudding.

Shredded dozen donuts

In sauce pan, about a cup or so of milk, cinnamon, couple cups of sugar, vanilla extract. Bring to a boil, stirring constantly so not to burn.

Pour over donuts. Bake at 375, 20 mins covered, 20 mins uncovered.

It second sauce pan, a cup or so of milk, couple cups of sugar, 2-3 tbsp maple syrup, cinnamon, two spoonfuls of peanut butter. Bring to boil to thicken. Serve over pudding.

I didn't have any eggs to make the first sauce a good custard. Nor did I have whole milk or 1/2&1/2.

The peanut butter was a very good surprise. It cut some of the sweetness.

Now that I think about it, I should have added some coffee to the sauce that was added to the donuts.
