Need suggestions on a stuffing.

I have a 10 lb bag of leg quarters that I am going to debone. I was thinking about just going with cornbread dressing. Anyone have any other suggestion?

Go to FoodNetwork.com and find Emeril's stuffed chicken wing appetizer and modify it for your quarters. Great Asian flavors.

you want to stuff the leg quarters or make stuffing as a side? if you just want a side then id go with shrimp and eggplant dressing...if you want to stuff the thighs, get some fresh green onion or jalapeno sausage and take it out the casing.
