The gumbo will be for 100 people who have never had it before. I don't want to run out. Any help would be appreciated.

I would imagine a cup and a half cooked for each person would be enough, so about 35 cups uncooked.

Just did a gumbo for 350 and cooked 20lbs of rice on the side..........MORE than enough. I would say 10-12lbs should do it. And use Zatarain's Par Boiled...comes out perfect everytime.

is that the kind of rice that's used a lot in those jambalaya benefit dinners? if it is, that rice might be ok for a gumbo but it absolutely sucks for jambalaya.
