In the half dozen meads I've made I've never once heated the honey to kill off anything. If you add heat to honey you will lose most of the flavors/aromatics. Added to the boil or flamout is essentially just a boost in sugar content with no flavor/aroma left at the end of it all.

I plan on adding at fermentation.

But even then I wouldn't worry about heating it. That process you listed from BeerSmith seems like a lot of work with little gain if you are going for honey flavor/aroma. Or just throw honey malt in your mash.

Boiled the wort for my 100% brett pale ale this evening but maybe it is more of a farmhouse ale since it had 2 lbs of oats in the mash and fresh orange peel added to the boil. Hit the boil and post boil with Simcoe, Chinook & Cascade and will dry hop with 3 more ozs of Simcoe.



No chilling!

After my beer has been in the bottles a couple weeks in the closet should I store in the fridge for a while before drinking? Or am I good to just chill and drink?

I think it will, and told B the same thing. In gonna go with a complete overhaul of my brewing set up. I'm gonna brew one more extract pale ale to put in the keg, then I will be emailing you with questions for bag brewing. I think if I simplify things, take out some time consuming steps, and make it easier on myself, I will get a new interest in brewing.

Sure. You can add boiled and cooled water to a post boil wort but I wouldn't bother personally.

Thanks.

I had a problem with the mash and ended up with half the liquid volume I started out with. The wort is very thick.
