Another option is to simply add it in the fermenter after the boil. Though honey is high in sugar, it has many antibiotic properties that help preserve it for long periods without storing, so many beer and mead brewers use it directly without pasteurizing it first.
I subscribe to this theory

you need to sterilize the honey to eliminate the bacteria without boiling off the aroma oils and destroying the enzymes. One way to use honey with your beer is to pasteurize it without boiling it:

Added to the boil or flamout is essentially just a boost in sugar content with no flavor/aroma left at the end of it all.
I plan on adding at fermentation.

you would add it in the fermenter then, right?

But even then I wouldn't worry about heating it. That process you listed from BeerSmith seems like a lot of work with little gain if you are going for honey flavor/aroma. Or just throw honey malt in your mash.

Boiled the wort for my 100% brett pale ale this evening but maybe it is more of a farmhouse ale since it had 2 lbs of oats in the mash and fresh orange peel added to the boil. Hit the boil and post boil with Simcoe, Chinook & Cascade and will dry hop with 3 more ozs of Simcoe.

After my beer has been in the bottles a couple weeks in the closet should I store in the fridge for a while before drinking? Or am I good to just chill and drink?

I think it will, and told B the same thing. In gonna go with a complete overhaul of my brewing set up. I'm gonna brew one more extract pale ale to put in the keg, then I will be emailing you with questions for bag brewing. I think if I simplify things, take out some time consuming steps, and make it easier on myself, I will get a new interest in brewing.
Sorry about the dress shirts

New to brew question:
Can I just add water to the wort in order to meet my targeted original gravity?
TIA

Sure. You can add boiled and cooled water to a post boil wort but I wouldn't bother personally.

Thanks.
I had a problem with the mash and ended up with half the liquid volume I started out with. The wort is very thick.
