Fried Eggplant

Best way to fry it? Any suggestions?

either / or works wonderfully:
Italian style:
Peel, dredge in flour, then eggwash, then italian bread crumbs. 350 for 3 mins (works best in small medallians or fingers)
Cajun Style:
Buttermilk, then Zat's fish fry
Italian style w/ marinara and cheese
Cajun w/ remoulade or holladaise

I like it this way but use seasoned Panko breadcrumbs instead. Makes it a crispier.

all good suggestions....but soak the slices of eggplant in salt water before anything(to draw out any bitterness) and add some Parm cheese to the bread crumbs.

I use the Louisiana brand shrimp and veg fry. Its in the pink bag. Make an egg wash and mix a little of the fry mix in the wash. Dredge in the wash then batter with the fry mix and fry. Delicious.
