A good big chuck roast is hard to beat and one of my favorite cuts. Well done. Dropped in a warm corn tortilla and topped with a mix of chopped onion, cilantro, tomato and squeeze of lime and I'd give that pan a run.
Try the whole shoulder clod. It's the whole chuck and runs about 20 lbs.

This batch was slightly greasy, moreso than previous attempts. I typically use a thick mustard based sauce but in this case I had a bottle of Pig Stand and used it. Or it could be that I cooked three roasts for the pics rather than a single. In either event I used a ladle and skimmed off the grease and the flavor was right on. I probably should have snapped a pic afterward...

Excellent cook!
If you want a little bark on those roast try this. Before applying rub, rub just a thin coat of cane sugar on the meat and then put on the rub. Works great on pork butts. Gives a hint of sweetness but not much.
You can also use molasses.

I'm not going to lie and say I wouldn't try a bite but that grease is a big turn off for me.
