Crawfish Boil Water

What do you all put in the water to flavor/spice it up? I know everyone has their own mix of stuff they put in. I have a shiny new 100qt pot.

I've got Zatarain's concentrated liquid boil (6-pack of 8oz bottles) and a 1 lb bag of Slap Ya Mama boil seasoning. Will some of the liquid boil bottles (16, 24 ounces?) and the bag of seasoning be enough to spice the water nicely (nose running). Do I need more of one of them, or something else?

I see a lot about garlic and lemon halves going in the water for flavoring too.

Thanks for the suggestions. Doing my first boil in Denver early next month.

I would just wait and throw all the seasoning on the crawdads after they come out the boil. Taste better that way in my opinion

I don't think I've ever seen anyone add slap ya mama to a boil. You do need salt though. Also, add the veggies. It matters. Garlic, onions, celery, lemons, potatoes and corn. Squeeze the lemons into the water first. Look like you know what you're doing.


In your 100qt pot I would only fill it up halfway and add 4 of the 8oz bottles. That shite is potent. A few sprinkles of cayenne will give it a little extra kick.

You'll get 100 different answers on this...

I use one jug of Zatarains powder, 1 7oz(i think) jar of cayenne, some bay leaves, 6 or so heads of garlic, onions, and lemons...all halved. Throw in some mushrooms, potatoes, etc and youre all set.

8 oz cayenne ; box and a half of salt; 4 zat seasoning sacks(the kind with the pepper corns in them). Bring it to a boil. Once boiling: 24 oz liquid ;4 oz garlic juice; 4 oz onion juice. Add crawfish. Boil 7 minutes. Turn off fire and squeeze in 8 lemons. soak until they drop.

I add the liquid, garlic, onion and lemon towards the end bc I believe that they "boil off" if you put them in early. This is a bullet proof method and has been used for 30 plus years or more in my family. Clean taste and full of flavor. Add more liquid if you want them hotter.

It's a dry mix specifically for boiling seafood. Not the regular stuff out of the can

ETA: I use it when I boil shrimp. Good stuff IMO

And my family has been doing just the opposite for over 30 years. This thread will be worse than a jambalaya thread.

No salt? Does the powder have salt in it? I've only ever used the liquid and the bags.

It takes a ridiculous amount of salt to properly season a crawfish bowl.

Sounds like I need a couple boxes/canisters of salt and probably a can of cayenne to add alongside my liquid boil bottles (I'm reading 24-32 ounces of liquid boil is good).

Probably sub the salt and cayenne in for the 1 lb bag of SYM boil seasoning. Or try a blend of the two.

I've tried it a few times because I made the mistake of buying a couple bags. Had to add a sack of Louisiana to it...

32oz in half a 100qt pot is plenty. I can't stress enough to use the veggies. Especially the garlic and lemon. And don't be afraid to throw some good smoked sausage in there too. The fixings are part of the whole experience.

That's A LOT of liquid. Get a couple boxes of Zatarain's seasoning pouches, some bay leaves, yes on the lemons and the onions and the garlic. Squeeze the lemons in. I add some celery salt and white pepper, but that's just me.

My dad does the bags and salt. I think this tastes just about the same as his "recipe." The premix powder has tons of salt.
