Country Ham Dinner

One of my favorite down home feel good meals. A Ham is so easy to cook and so damn good, esp the sammiches that follow.
From a couple weeks ago:
I had about an 8lb Shank Ham (I like the Butt half just as much). Trimmed the excess hide off and saved. Cross cut and seasoned. Had some Cherries I stuck to Ham with toothpicks. Used Cherry juice mixed with honey, which I poured over the Ham. Cooked at 350 about 20 minutes per lb, covered loosly with foil. Basted every 30 minute after 1st hour. There are many things that can be used on the Ham. I love Pineapple slices, but didn't have any.
Purple Hull Peas - Diced up the trimmings and cooked down in some Bacon Grease. Added an Onion to saute. Cooked Peas with mixture.
Home Made Mashed Potatoes - I like Red Potatoes, boiled, mashed and drowned in real butter.
Fresh Sliced Garden Tomatoes and some good ole Brown and Serve Rolls.
