Cast Iron Cookware

I currently have no cast iron cookware, and want to get a few pieces. Any recommendations on a few basics to start with?

We have the 8 inch one at my house, and use it probably 4 or 5 times a week.

is a dutch oven a must have for making jambalaya? if so, would a 5 quart be big enough, or better to go a little larger?

I've honestly never made jambalaya.

But, yes, get a dutch oven. I'd go bigger than 5. This is the one I have.

How many you cooking for?

I've made a small jambalaya for 4 people (3 cups rice and 2 lbs meat) in a 12" skillet. If I were you I'd make my first piece a 12" Lodge skillet and build from there.

I use the 10qt Lodge non-enameled or the 10qt Martha Stewart enameled dutch oven for jambalaya.. but that's because when I make jam, I'm making it to eat on all week/send to my younger brother.

I think you could easily be happy with a cast iron large skillet and dutch oven. I find very little use for the flat skillet type pan.. the pan with the grill grates.. etc.

I use the small skillet from time to time, but it isn't something I NEED.

We have two small single serving cast iron pans, an 8 inch, two 12 inch pans, a 12 inch griddle, a grill pan, and a dutch oven. They're almost all inherited though. They don't even have a brand on them. They're excellent though.

From what I follow, Lodge if you don't have a ton of money. Le Creuset if you do.

Sam's has a nice Tramontina 6.5 quart enameled cast iron dutch oven for about $38 right now. I picked one up and I really like it.

Just ordered this 6qt Lodge enameled cast iron dutch oven for $48. Already got the 7.8 qt. thought it was a pretty good price

I carry Bayou Classic in my store.. better price than Lodge, but I like them too, have a couple of pieces.

What foods will you be cooking in cast iron and for how many people? That will help with sizes and pieces. I have a good bit of it, mostly passed down.
The round and flat are good for pizza and can be used instead of a stone. They also reheat pizza very well on the stove. I used mine a lot until I got the baking steel. They can go on a grill, too, so keep that in mind for what pieces you may want and uses.

Steaks
Burgers
Jamba
Roux
Cornbread or Cornbread muffins (I love my muffin and wedge pieces)

Just a start on uses for cast iron pieces...

You can also take a look a a lot of them at hardware stores.

Check out some thrift stores and resale shops. Sometimes you can find some good deals on old cast iron. I found a couple of Griswolds in an off the beaten path flea market.

I have about a half dozen pieces, but the most use I get is out of my 10" skillet, and my 7qt Dutch oven.
