Folse's gumbo looked badass.

I've actually never had gumbo z'herbes.

The death by gumbo is frickin excellent. It's probably my favorite I've had in a restaurant.

We would have to have non-okra gumbo and okra abomination categories.

Anyone bringing tomatoes to either would be instantly disqualified.

Gris would probably win.

Then, the okra and the non-okra crowd would get too close to each other and the fistfight would start.

Too much drama.

I was on another forum where bay leaves, yes or no, was the gumbo battleground.

We've had that battle here. Otis is a bay leaf, all manner of herbs in gumbo guy.

And, I doubt I'd win anything without the okra knowing some of the folks here!

The real battle would be chili. Ground meat v chunky meat. Tomato product v no tomato product. Chili powder v toast and grind your own. Beans v no beans. We have that stellar chili thread to prove it. It got ugly.

Oh, okra doesn't belong in a dish that gets its name from okra?

Bay leaves are a necessity for gumbo.

A roux is a necessity for gumbo. Bay leaves do not belong in gumbo. Put it in your gumbo z'herbes if you want, but not regular gumbo.

Disagree. I only add about 3 or 4 bay leaves in my gumbo (makes about 12 servings). I do it for every gumbo i do. My grandma used to do it in her gumbo, and my dad used to tell me my grandma cooked the gumbo under the trees out back. Therefore, every gumbo has bay leaves. And i make a damn fine gumbo. The last one i made, however, i could have cut back on the roux by half.

You all wrong, gurrrl. An' it ain't gumbo without okra...you're whippin' up a thin cajun stew. Fact.
