Who fired up the smoker today?

Today's smoke was beef ribs using oak wood.

Nice, but I prefer a darker bark.

I put a chuck roast on trying to make burnt ends out of it. Took dramatically longer than expected to cook and turned out tough in the end. frick doing that again.

Funny. I opened this thread to say I’ve been wanting to try my hand at beef ribs. Yours look great.

I thought about doing them with a mole/chocolate BBQ sauce for the competition.

I smoked some filets on the Yoder for about 75 minutes to 120 and finished them with a nice sear. Not bad for my first go at smoked steaks. Would do it again.

Did a chuck roast last weekend to make pulled beef. 225 for 3 hours, then into an aluminum pan with 2 cups of beef stock till it hits the stall. Then cover it with aluminum foil till it hits 210. It usually takes me about 8 hours. I like it much better than pulled pork.

Ugh, I tried to fire mine up this morning. It didn't make it through the start procedure and then it wouldn't feed pellets so I came to the conclusion the auger is stuck. Didn't feel like pulling the auger at 4am so I fired up the weber genesis and I am doing low and slow in it. I have it about 240, I'd prefer a little lower but I am just doing some butts for pulled pork, temp isn't as critical as other cuts and I don't want to play the up and down game with 240 is good enough. I do get to try out the iGrill 3 that the Genesis came with.
