Should I uncover my plants periodically?

Temps are above freezing but hard freezes next two nights. Plants have been covered since Sunday. Should I let them breath and see the sun or just keep them covered till Saturday?

I always try to uncover mine whenever possible. Without any sun, they start yellowing.
