My mom used to make a cold kidney bean salad with Mexican food and I still make it to this day.
1 can kidney beans drained
2 hard boiled eggs chopped
1/4 cup Chopped onion
1/2 cup chopped cheddar cheese
Mayonnaise
Celery salt

I've used smoked turkey legs, and cut the bones in half to make the broth. It is outstanding. Still included sausage though.
People sleep on smoked turkey products. I throw it in gumbo, too.

Growing up we ate Red Beans with either ground beef or ground pork (green onion pork sausage out the casing) often. My mom would make that 2 or 3 times a month. My mom would brown her ground meat, drain the fat off, sweat down an onion with it. 1 big can of Blue Runner, 1 can of regular dark red kidney beans (rinsed). Let it cook about 15 minutes and serve over rice. That was our entire meal and we loved it, still do.

You have proteins you can cook with the beans, and proteins you can cook separate from the beans and just serve with it.
For example, I've served fried chicken on top of red beans, and it's great. You just fry the chicken separately.
I pretty much always include ham in my red beans, along with sausage. Get the cut up chunks of the end of the ham (some places call it ham seasoning). Take it home and cut it into smaller pieces.
I take the cut ham, cut up sausage, and fry that off. Then, remove the ham and sasuage, keeping as much of the grease in the pot as you can, and then sautee the trinity in that grease. Sometimes have to add a bit of oil to it, sometimes not.
After Christmas I had about half of a 10 lb spiral ham left. I cut off just about all of the meat, leaving a little on the bone. Took about 1.5 lbs of the cut ham and chopped it up real good for the red beans. Fry it off like above with the sausage. After I added the beans and water, I put the ham bone in there, brought to boil, and simmer about 2.5 hrs. It gave the red beans a slightly sweet flavor, which was interesting! Everyone who ate it praised it.

I decided to try it with no meat and used a couple tablespoons of better than bouillon ham base. I thought it came out pretty good but I like having the protein in there to eat it.

Best with the bone from a spiral cut ham or with smoked ham hocks imo.
