Sirloin Tip Pork Roast for Dinner This Evening

This morning I did a lil prep work for this evening's dinner. Got a small sirloin tip pork roast stuffed with garlic and seasoned and resting in the fridge until later this afternoon when it will go on the grill for a little smoke and roasting.
Then I roasted and diced a nice sized jalapeno pepper.
This went into a apricot/pineapple glaze with white balsamic vinegar I made for the pork roast.
I still need to figure out what other side to go with the pork and baked sweet potatoes.

The roast ready to come off the grill.
Rested and sliced.
I made a buttered green onion basmati rice I intended to use as a side but served some of my zydeco green beans and some white beans over it. Really good!
Not a bad meal at all!!!!!

Yes I have. Maybe the next time I'll do it with gravy.
