Up wins if you are considering the “married life” montage as an opening - it’s technically not the opening scene. It takes a minute to get to the montage.
It’s like saving private Ryan in that when this conversation comes inevitably there will be a douche bag that well technically D-day isn’t the opening scene

If we're sticking to just self-contained scenes, it's Up. How many movies have made audiences start sobbing 5 minutes in?
Pete Docter should be considered one of the most impactful writers/directors/artists post 1990. Can't think of any filmmaker currently working who is as skilled at infusing his works with raw humanity.

I think WALL-E is the better movie
after having to watch this about 30x with my little boy i've determined WAL-E is a criminally underrated pixar film.

I watched The opening of Wall-E on a Spanish movie channel without knowing it for about 40 minutes
When I was in Jamaica a few years ago, I noticed that the TV stations have a weird mix of English and Spanish. One of the last days of the trip, we had a "when in Rome" moment and bought some weed from the cashier at a gift shop, and decided to watch Finding Nemo that night. After the opening, the title card came up and said Buscando a Nemo. My SO was like "no wonder it doesn't make any sense, we're watching the Spanish version!"
I told her "No, they've been speaking English the whole time, you're just super high."

Spin off: best credits sequence?
Inside Out with the boy, bus driver, dog and cat
Love the Peter Gabriel song that closes Wall-E too (what a fricking movie that is)

There's really no topping Up.
Yeah. Not sure how this was not the purpose of the OP.

Finding Nemo has a pretty killer opening.

And what I’m saying about Up is it wins easily if you include that montage - no other Pixar films really rival that opening. But if you did choose between the “true” openings you would have a bit harder pick. Toy Story 3, WALLE, Nemo, Incredibles all have great true opening scenes.

Best opening: Up
Best overall: Coco
Close 2nd is Wall-E

The entire first third of Wall-E is legitimate Oscar worthy filmmaking.
That 9 minutes from Up, though, is Pixar's finest moment.
I agree here.
The beginning of Wall E when it’s just him and Eve is incredible, there is a reason it was nominated for best picture.
Wall E is fantastic.
