I know this is an age old debate...
Building our first new house and likely to be our only one. So lots of customization.
Looking at Viking, GE Monogram and Thermador for Double Oven (French Door Style and Side open) and 6 burner range cooktop.
Is their truly one “better” from a quality stand point that will outlast the others? Or does it come down to just preference (money seems to be splitting hairs for the most part).

I had Viking in a previous house. Would not recommend.

Thermador is what I would have done if I was able to do it again.
Someone can correct me but aren't they under Bosch?
I remember Stanton’s was doing a free Bosch dishwasher with a Thermador range.

We have Thermador double oven, stovetop and dishwasher. Love then all. Also love the Bosch drawer microwave. Made the mistake of getting Kitchen Aid fridge because we had them previously and liked them. Big mistake- they are obviously cutting costs and making cheap crap now.

I went all out and got a bluestar for mine. Love it, but if would do it again would go with thermador due to having a sealed top to make it easier to clean. Would also go for gas top and electric oven to prevent gas smell when pre heating and excess heat.

I have Kitchen Aid oven & microwave combo and a Wolf 4 burner range with a griddle. They are awesome

I'll be putting in a commercial style griddle/cook-top next time I build for this reason. I haven't seen a Thermador in person but every Viking or similar brand I've used is a PITA to clean.

I've had good luck with KitchenAid. Really like Bosch dishwashers as well

Just a heads up. I found that the new crap they build only last about 5 years and then they start to break. The more bells they have, the faster they break. Our first appliances had lasted 15 years and never a problem. We sold the house with them. Last 20+ years, we had replaced the appliances three times due to failure. WTF? They are all crap now.

The Thermador induction cook top is superior to any gas range I have ever used and is a breeze to clean, windex and paper towels and you are done.

Thermador is much better quality and value.
Wolf and Viking you are just paying a premium to fund their marketing department.

Are you looking at built-in refrigerators?
If so, I was told by a service guy to only look at sub zero. I had a Electrolux and it was a piece of crap. I wasn’t going to pay for another so I redid our cabinets and go a regular sized fridge. This one is a GE profile and it’s been fine for 3 years now.
Also was told by a friend that worked for GE that their built-ins had more service calls and soon more than anything else they made in appliances.
Lastly, a dishwasher will last you 3-5yrs tops. We have been in our house for 10 years and I replaced ours for the 3rd time a couple of weeks ago.

Consumer Reports released a survey in an issue earlier this year that ranked appliances based on frequency of repair. You can probably find it at the library for free.
Viking was bottom of the barrel.
A summary in a free online article summarizes:
The most reliable brands are as follows:
Speed Queen — average predicted reliability score of 83 out of 100
Miele — 75
Ikea — 70
LG — 68
Thermador — 63
Bosch — 63
The least reliable brands are:
JennAir — average predicted reliability score of 37 out of 100
Asko — 37
Fisher & Paykel — 29
Dacor — 29
Electrolux — 28
Viking — 15

Your local appliance repair pro probably knows a thing or two about which brands make the most reliable refrigerators, ovens, dishwashers, washing machines and dryers. So how about asking a few hundred of them?
That's what a national network of appliance repair technicians called Puls just did, with a new, in-house survey that ranked all of the major brands for things like reliability, value and ease of use.
The top recommended brands overall: Whirlpool, Maytag and KitchenAid, in that order.

I built new and went with Kitchen Aid all around. 36” Gas range and hood commercial style. Same with dishwasher and 30” convection microwave. Damn good equipment. No regrets.
