I’m going to vacuum seal all of mine this weekend. Just a big chefs knife to 1/8th it?

That's all I did. Open the original seal, eighth it with my chef's knife, one eight wrapped lightly for eating right away and pull a hard vacuum to pack the rest for later.

You didn’t vacuum seal 7 1/8(3lb) wedges?

No, I did. I cut the whole ball into 8 pieces, left one unpacked to eat right away and individually vacuum sealed the remaining 7 chunks for later.
