Homemade Vinegar

I have ordered a few books for my interest. Does anyone make their own vinegar?

Any input would be appreciated.

Not anymore but I used to. Whenever I would open bottle of red wine, I'd pour the dregs into another bottle and put some cheese cloth over the mouth. It would sour naturally (Acetobacter is everywhere) and over time I would accumulate most of a bottle of red wine vinegar.

That easy? dang why have I waited so long. Does it matter what type of wine? Sweet or dry? Ok I will get out and do some research. Appreciate the quick and easy idea.

Other than port I don't drink much sweet red wine so I can't say I ever added any sweet wine to the vinegar. I'm not sure if Acetobacter can metabolize sugar. If they can't, something else may get in there and eat it and that might not be desirable. So I'd stick to dry to be on the safe side.

Also sometimes the vinegar would develop a solventy smell, like acetone. If you leave it alone, that goes away eventually.
