WFDT: Mais, enough with the freezing cold edition

I saved some black pots for a friend of mine. She then asked for me to cook crawfish etouffee and write the recipe.


ETA: Etoufee recipe
1C butter and 1C flower-make a light brown roux
1 large onion, 1bell pepper, garlic, 1 can diced tomatoes. Sauté this in the roux.

Once it is done, add seafood stock. (I cheated and purchased seafood stock this time. I know

Add seasoning to taste (a little salty is ok) and bring to a boil.

Cut heat to low (you want it barely plip-plopping) cover and sit for about an hour stirring every once in a while

Add 3-4 lbs cooked crawfish and bring to a boil (10 minutes before serving)

Add green onions and serve over rice.

Get a piece of French bread to wipe the bowl
