I can see this working, especially after the mess that was the 3 most recent Star Trek films.

Could be interesting, but only as long as someone else puts a comb through the dialogue. Otherwise every scene will sound like a roomful of Tarantinos talking to one another, regardless of race or species.

Star Wars is action-adventure, pop films. The focus tends to be more on the action moving the plot forward, with mythology thrown in.
Star Trek is political, often dialogue driven, and situation driven. At least to me. And Star Trek often takes some pretty big risks.
Trek is perfect for QT to do his own thing. Star Wars makes no sense whatsoever. You see what happened when Lord/Miller tried to do something outside the box with the Han Solo movie...they got canned.

I've said it before, Tarantino could direct a short animated film about two butterflies that rescue a worm from a lizard and I'd buy two cinema tickets.

Anything beats what’s been going on with the new Trek universe. JJ Abrams is a curse on modern cinema and whoever’s idea it was to put him behind Star Trek and Star Wars should be publically tortured and executed.
