This is a huge help. I also add onions and bell pepper to most anything I'm cooking in a pan (like chicken).

For spaghetti, I add hot sauce, brown sugar, and fresh herbs (I would recommend Greek Basil)

For Tacos, it's all about the toppings. Use real flank steak or maronated chicken with lime. Cut up avocados and make guacamole. Have a unique salsa to top it with. Use different cheeses for different flavor combinations (provelone will add a sweet smokeyness). Try using diced cucumbers rather than lettuce for a change of pace.

For Hamburgers, I add in cut up onions and garlic to the meat patties, season well with cajun spices, and top with grilled mushrooms, sweet baby ray's, and pepper jack cheese. It's not reinventing the wheel, but it sure is tasty.

For burgers, grind your own meat it makes a world of difference.

Then you can grind in other ingredients to really set it off.

Bacon + Cheese
Spinach + Feta
etc

Tacos-like everyone says, lots of options but dont buy the typical taco seasoning mix. I have been making my own New Mexico Green Sauce to put on the tacos. Just cook your meat with some salt, black pepper, cumin and garlic.

Spaghetti is one of the least boring dish there is, imho. To add interest you can make your own pasta (which I've never attempted). You can buy or pick your own fresh Roma tomatoes and using a food mill, make your own tomato sauce. This will change the dimension of your sauce completely.
I like trying variations on meatballs. Sometimes I fry them and sometimes I bake them. You can opt out of using ingredients like onions, or experiment with different meats or proportions of meats in the meatballs, like veal, pork and beef.. Add beef or chicken stock to your sauce, add Ricotta cheese and experiment with different varieities of Ricotta..
But the most significant thing you can do to spice up a dish is to read about its origins, study from great chefs and implement your own methods.. It's what being a cook is all about.

I can't post a recipe because I don't use one. I was taught by an old chef how to do it and eyeball all ingredients.
