for many years now, we have been frying turkey. this year, i'm craving a gravy (from the turkey) on my rice. i'm from rice country and live on rice and gravy. so, today for thanksgiving, we will be roasting the bird with some smoked sausage.
happy thanksgiving to ya'll.

At Mom's house we always have both, fried tastes better but gotta bake one so you can have rice and gravy!!!

The fried one is the snack and the baked one is the meal.

The gumbo made froma fried one is great. The stock from a fried one has a deeper flavor

i've smoked mine the last couple of years, and it has been fantastic. i think i prefer that to fried or baked. but i discovered this morning that i'll be baking mine today because i forgot to pickup charcoal....
the upside of my mistake is that i will enjoy the gravy!
