It has more to do with the fact that when you're younger, the Jedis can mold you into the type of person they want you to be. Anakin was already the person he was that could not really change, and if he's power hungry and envious, then its almost impossible to eradicate from him. So yeah, older people would be more prone to the dark side since they aren't molded from birth.
I think Darth Maul's origin is that Palpatine got him as a young child and raised him, and thus was completely loyal to him. Palpatine molded him into exactly what he wanted him to be. Vader and Dooku came later in life, and thus while they could be corrupted, they were not loyal servants to him and plotted on overthrowing him from the start. So unless you want an apprentice that seeks out to kill you, for both Jedi and Sith, the younger the better.

I have to say, M/TV Board, that I'm willing to bet no one at Skywalker Ranch put in as much effort when discussing the plot of Revenge of the Sith as has been displayed in this thread.

It has more to do with insuring the children never gain attachments as that can lead to the dark side.

For what it's worth, Luke's view of the force in the EU is very different from the Republics view.
I know EU no longer matters, but they did spend a lot of time on it.

Because they can't brainwash adults but they can with children. Also, had Luke not had the example of what his father became, he very well could have turned.

Well, that has alot to do with molding a person. They like to take them in before they develop any attachments, and it wouldn't be bad idea for a Sith Lord to make sure his apprentice didn't want to murder him.
