Looks PDG! I'll take a bowl or two. That way you get you veggies, grain and protein in one bowl.
I've made jambalaya with okra in the past and it was REALLY good.

I use a good bit of trinity, plus the green onions and parsley. I add red bell pepper ( or fresh cayenne ) for color. I like color in the dish.

At first, like Miz Darla, I asked
WHAR DE RICE?
Then I looked down and saw it hiding under the stuff.
Looks nice to me - even though I am low carb until after Easter. With a weight loss goal of 20 pounds, rice at the level I eat rice is a no-no right now, as is cornbread, potatoes, bread and lots of other stuff I live for.
Please - no one should consider I am suffering. What I'm eating may not look Postworthy, but the taste is nice to me, as is my ideal weight level, which is coming back at a rate of 1 - 1 1/2 pounds a week.
However, I look forward to my next jambo meal, which would be OK if it looked like what you just posted!
