Favorite Crock Pot Recipes?

Finally got a crock pot a couple of weeks ago and I'm obsessed with this thing already.
What are some of y'all's favorite recipes/meals?
I made some black bean and chicken tortilla soup the other day and have a roast cooking now. Can't wait for that smell to start permeating!

Ingredients
1 boneless beef rump roast (4 lb.)
1-2 sliced onions (depending on how much you love onions...I use 2)
1 1/2 10.5 oz. cans double beef broth
1 cup dry red wine
3/4 cup cider vinegar
2 tbsp. sugar
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. thyme
1 pinch ground clove
1/3 cup cold water
1/4 cup cornstarch
Directions
1. In your slow cooker, combine all ingredients except water and cornstarch. Cook for 5-5 1/2 hrs. on high or 10-12 hrs. on low.
2. Combine water and cornstarch and add to pot 1 hr. before done to thicken the gravy.
3. This dish is best served on top of hot, garlic mashed potatoes.

Got one for xmas, since then I have cooked: orange chicken, pot roast, boston butt, chicken tortilla soup and a broccoli chicken casserole.
All were good, extremely easy to make.

another quick and easy one...
Easy Crockpot Italian Chicken:
4 chicken breasts, 1 packet Zesty Italian dressing seasoning, 1 8 oz. cream cheese (softened), 2 cans cream of chicken soup; Cook on low for 4 hours. (If sauce is to!o thick, add a little milk.) Serve over pasta.

I like to make buffalo chicken.
Put a bunch of chicken thighs in the crockpot. Cover with 1/2 a bottle of wing sauce and 1/2 a packet of ranch dressing mix.
Cook on high 5 hours.
Shred the chicken. You can discard the skin if you want, or leave it.
Put the shredded chicken back in the crockpot with the rest of the wing sauce and ranch dressing mix. Add 1/4 stick of butter.
Cook on low for 1 hour.
Serve on toasted buns with lettuce, red onion and blue cheese or ranch dressing.

There have been a few threads on this. Search crock pot and when that comes up, search the same thing under the google option on the right and you'll get several threads. I thought we'd had a long one, but I didn't see it.
