Boudin balls are good but to me don't travel well and I prefer them hot. Or maybe they do travel I just like them hot so I buy the frozen from Tonys and drop in the hot oil at home.
The duck I would say, grill medium rare, rest and slice thin. Poach the pear a bit in the honey. Slice the Brie and add to the crostini and under broiler to warm then put sliced pear and sliced duck and sprinkle just a bit off sea salt. Maybe?

This might be a little too involved for today, but it's a good alternative to the usual meatball appetizer.

Too late to the party, but for future reference, I saw a smoked salmon blt on DDD during the wee hours of this morning. The salmon was smoked, fat on, on an on site little old smoker in the back of the restaurant.
My thoughts were to make mini sandwiches like this using the seamless Pillsbury croisant dough. Roll it out, cut in small circles and bake. Then, make the sandwich using the smoked salmon, a little mayo or other sauce concoction for moisture, a nice crisp piece of bacon, sliced grape or cherry tomato and a little lettuce. Make ahead and different. I had something similar at a party a few months ago with just bacon.

Well I had some smoked salmon at the Royal Sonesta last week. It was cold smoked lightly then sliced thin and served as a whole filet. You just peeled a piece off. In the skin. It was good. That would be nice. Need some kind of caper mayo or the likes, maybe thin sliced red onion? Interesting.

Wasabi and soy sauce almonds.
Well I made the defiled eggs with caviar since I had that on hand and they destroyed them. And I made a big pan of Vermont white cheddar biscuits which went well with his white beans and he had a nice pork roast so we used them for little pulled pork sandwiches. Man that worked out well.
