Its also not common to have chicken and shrimp together. It occurs its just not the norm.
Our versions of italian cajun typically involve alfredo style sauce with crawfish or shrimp or chicken with some tasso thrown in, trinity and there is no such thing as cajun spice. Its just salt,pepper,cayenne for the most part.

Nothing you named is that bad for you singularly except the sausage and it doesn't have to be.
And yes, LA is the only place to eat cream based pastas.

3 different meats, pasta, and a cream-based sauce. I bet the calories on a serving on that are pretty ridiculous.
Same thing goes for most other classic Louisiana dishes. They were born out of necessity from being poor; cheap, fatty cuts stretched with oils, flour, rice, etc. It's damned tasty, but all so bad.
Anyway, I wasn't planning on making any sort of nutritional debate. Just was making a joke, don't be so sensitive.

I'm not sure what a dish someone ate in Ohio has to do with people in Louisiana being overweight.

Kinda sounds like Pastalaya.. And yes.. we eat the hell out of it.
I've seen this combination in gumbo.. It's called "Louisiana gumbo" on the buffet at Le Pavillion.

Cajun Pasta is a tasty nutrious treat.
The wife makes a killer crawfish lasagna. Really good as long as you don't use those chinese crawfish in it.
How coulld you go wrong with crawfish or shrimp or nutria in a creamy spice sauce with linguini and some crusty bread?
Add a little sausage, some green and red peppers, chopped onion and celery? Even better!
